I’ve been loving this fun new spin on avocado toast! Using sweet potatoes as your base is a delicious way to enjoy this healthy breakfast, while adding so much natural flavor.
- 2 sweet potatoes
- 1 ripe avocado
- 1/4 cup pea shoots
- 1/4 cup goat cheese crumbles
Wash all produce.
Cut your sweet potatoes lengthwise into large slabs.
Roast in the oven at 400° for approximately 18 minutes, turning half way through.
Remove from the oven and let cool slightly.
Mash up avocado and spread onto each sweet potato.
Add pea shoots to each sweet potato and sprinkle with goat cheese crumbles.
I like to serve these on a bed of baby arugula for garnish.
