If you haven’t noticed yet, I am on a huge Mediterranean roll this week! We are such big fans of the fresh, healthy flavors that come along with a Mediterranean diet. Today I’m assembling Mediterranean Bistro Boxes, which can be perfect for a lunch on the go, a picnic, or a healthy snack!

- 1/4 cup cucumber slices
- 1/4 cup olives
- 1/4 cup tomatoes
- 1/4 cup sliced celery
