Sheet pan fajitas are perfect for an easy Taco Tuesday, or any night of the week! Just wash and chop your veggies, toss with olive oil and seasoning, pop them in the oven, and you have dinner!
- 1 green bell pepper
- 1 orange bell pepper
- 1 red bell pepper
- 1 jalapeño
- 1/2 red onion
- 1 lime
- 1/4 cup chopped cilantro
- 1 Tbsp extra virgin olive oil
- 1/2 Tbsp Trader Joe’s Chili Lime Seasoning
- 1/2 Tbsp cumin
- 1/2 Tbsp crushed red pepper flakes
- 4 tortillas
Preheat your oven to 400°.
Wash and dry all produce.
Core your bell peppers then cut into long pieces, chop your jalapeño, chop your onion, cut your lime into wedges, and finely chop your cilantro. Transfer onto a large baking sheet.
Add your olive oil, cumin, chili lime seasoning, and red pepper flakes onto chopped veggies and toss well.
Place in oven and let roast for 15 minutes, tossing at 8 minutes.
Remove from oven and let cool slightly, transfer into tortillas and enjoy!
