Veggie Loaded Nachos

Brandon (my wonderful husband) and I absolutely love nachos. That’s one of our usual go-to’s whenever we go out to eat. I’ve put together a healthier plant-based nacho recipe (still not that healthy though, sorry) that’s loaded with fresh and delicious veggies!

Ingredients

  • 1 bag tortilla chips
  • 1 cup shredded cheese (you can swap for vegan cheese to make this a vegan recipe)
  • 1/2 cup fresh tomatoes
  • 1/2 cup shredded red cabbage
  • 1/2 cup chopped red onion
  • 1/4 cup freshly chopped cilantro
  • 2 jalapeños
  • 2 radishes

Instructions

Preheat the oven to 400°.

Wash and dry all produce.

Pour tortilla chips on a baking sheet, sprinkle cheeses cheese, and pile on your fresh veggies, except for the cilantro.

Bake in oven for 8-10 minutes, remove and let cool slightly.

Sprinkle chopped cilantro on nachos and enjoy!
