This easy recipe calls for little potatoes and some big flavor! Save a spot on your Thanksgiving table for these rosemary garlic smashed potatoes.
- 12 mini potatoes
- 1 clove garlic (minced)
- 1 Tbsp extra virgin olive oil
- 1 Tsp chopped rosemary
- Salt and pepper to taste
Preheat oven to 425°.
Bring a large pot of water to a boil. Add your little potatoes and boil for approximately 10 minutes or until potatoes become soft.
Transfer potatoes to a greased baking sheet. Take your potato masher and press down on each potato one time until they are smashed.
Add a drizzle of olive oil, minced garlic, rosemary, and salt & pepper to each potato.
Roast in oven for approximately 10 minutes, until crispy.
