Using shaved Brussels sprouts as the base for a salad is a great way to change up your usual salad routine! It’s incredibly easy to make shaved Brussels sprouts. You can use a sharp knife and slice them by hand or for an even easier and faster method, you can use your food processor.
- 3 cups of fresh Brussels sprouts
- 1/2 cup thinly sliced apple
- 1/3 cup dried cranberries
- 1/3 cup pepitas
- 1/3 sunflower seeds
- 1/3 cup pomegranate seeds
- 1/4 cup balsamic vinegar
- 1/4 cup extra virgin olive oil
- 2 Tbsp fresh lemon juice
- 1 Tbsp dijon mustard
Wash and dry all produce.
Make your salad dressing by mixing all dressing ingredients together and let sit for at least 10 minutes to let flavors meld. Mix well again before serving.
Cut the hard base off your Brussels sprouts and remove any outer leaves the might be browning or appear damaged.
