Rainbow Salad

Following the nutritional guidelines to “eat a rainbow” of fruits and vegetables, I made the prettiest salad!


  • 2 cups chopped lettuce
  • 1 avocado
  • 1/2 cup tomatoes
  • 1/2 cup shredded carrots
  • 1/2 cup diced yellow bell pepper
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped red onion
  • 1/2 cup chopped red cabbage
  • 1/3 cup dressing of choice
  • 1/4 cup sugar snap peas


Wash all produce.

Place your chopped lettuce into a large serving bowl. Arrange remaining veggies on top assorted by color. Garnish with an avocado in the middle and snap peas on top of each color section. 

Drizzle your favorite dressing on top and enjoy!
