I’ve been experimenting with tons of different stir fry recipes recently and absolutely love the flavor that comes together in this one. This recipe is pretty easy (I even cheated and used pre-made sweet chili sauce-woo!).
- 2 cups cooked rice
- 2 bell peppers
- 1 large carrot
- 1 Tbsp extra virgin olive oil
- 1/4 cup sliced green onions
- 1/4 cup sweet chili sauce
- 1 tsp sesame seeds
Cook rice according to package instructions.
Wash produce well.
Pour your olive oil into a pan and turn to medium heat. Add diced bell peppers and chopped carrots to olive oil and sauté for about 8 minutes (stirring frequently) until peppers and carrots have softened. Pour the sweet chili sauce into the pan and stir well. Remove from heat.
Divide the cooked rice into two bowls and put the sweet chili veggies on top of your rice. Garnish the tops with your chopped green onions and sesame seeds.
