This salad has a bit of a radish theme! I’ve been exploring different types of radishes and have been amazed by the incredible colors hiding in these root veggies. Adding raw radishes to your salads or other dishes, gives you amazing texture as well as bright, beautiful colors, and is one of my favorite salad tricks!
*This recipe makes one large salad with 3-4 servings
- 2 cups lettuce (I used green leaf lettuce)
- 4 red radishes
- 2 watermelon radishes
- 1/2 small cucumber
- 1/2 cup snap peas
- 1/2 cup chopped red cabbage
- 1/2 avocado
Wash all produce.
Chop your lettuce and red cabbage and place it in a large serving bowl.
Thinly slice all radishes, cucumber, and your avocado and arrange them on top of your lettuce. Add your snap peas into the mix.
Drizzle on your favorite dressing and enjoy!
