Plant-Based Taco Bowls

We rarely skip Taco Tuesday at our house. There are so many delicious plant-based options that are full of incredible flavors. Today I’m sharing my plant-based taco bowls!

Ingredients

  • 1 cup fresh chopped lettuce
  • 1/4 cup black beans
  • 1/4 cup avocado or guacamole
  • 1/4 cup red onion
  • 1/4 cup cauliflower
  • 1/4 cup sweet potato
  • 1/2 Tbsp taco seasoning
  • 1/4 jalapeno for garnish
  • Fresh lime for garnish
  • Fresh cilantro for garnish
  • Tortilla chips for serving (optional)

Instructions

Preheat your oven to 425°

Chop your veggies then toss your sweet potatoes, red onion, and cauliflower in olive oil and taco seasoning. Roast in the oven for approximately 20 minutes, tossing halfway through.

Wash and chop your lettuce, then place in a serving bowl.

Assemble your roasted veggies, sliced avocado, and black beans on the bed of lettuce. Garnish with cilantro, jalapeño, and lime.

Drizzle chipotle sauce on top and enjoy!
